- Begin by soaking the raw cashews in water for at least 2 hours, then drain and set aside.
- In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the chopped tomatoes and cook until they soften, about 5 minutes.
- Sprinkle in the ground cumin, coriander, turmeric, and chili powder, stirring well to combine. Cook for an additional 2 minutes to toast the spices.
