    Description

    Honey Wine, known as ‘Tej’ in Eritrea, is a traditional fermented beverage made from honey, water, and a special type of hops called ‘gesho’ leaves. It holds cultural significance as a symbol of hospitality and is often served during celebrations and gatherings.

    Ingredients

    • 1 liter of water
    • 300 grams of honey
    • 50 grams of gesho leaves (Rhamnus prinoides)
    • 1 lemon (optional, for flavor)

    Instructions

    1. In a large pot, bring the water to a boil.
    2. Once boiling, remove the pot from heat and let it cool slightly.
    3. Add the honey to the warm water and stir until fully dissolved.
    4. If using, squeeze the juice of the lemon into the mixture and stir.
    5. Add the gesho leaves to the mixture, stirring gently.
    6. Cover the pot with a clean cloth and let it sit at room temperature for 3-5 days to ferment.
    7. After fermentation, strain the mixture to remove the gesho leaves.
    8. Transfer the honey wine into a clean bottle and seal it.
    9. Allow it to age for at least another week before serving for the best flavor.
