Description

Ingredients
- 10 green bananas (matoke)
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tomatoes, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup vegetable broth or water
- 1 cup peas (optional)
- Fresh coriander for garnish (optional)
Instructions
- Peel the green bananas and cut them into large chunks.
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute.
- Add the chopped tomatoes, salt, and black pepper, cooking until the tomatoes soften.
- Add the banana chunks to the pot and pour in the vegetable broth or water.
- If using, add the peas at this stage.
- Cover the pot and steam the bananas on low heat for about 30-40 minutes, or until they are tender.
- Once cooked, mash the bananas slightly with a fork or potato masher, mixing them with the sauce.
- Serve hot, garnished with fresh coriander if desired.
