Uganda Mandazi
Description

Ingredients
- 4 cups all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cardamom
- 1 cup coconut milk
- 1/4 cup water
- 1/4 cup vegetable oil (plus more for frying)
- 1 large egg (optional)
Instructions
- In a large mixing bowl, combine the flour, sugar, baking powder, salt, and ground cardamom.
- In a separate bowl, mix the coconut milk, water, and vegetable oil. If using, beat in the egg.
- Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth.
- Cover the dough with a cloth and let it rest for 30 minutes.
- After resting, roll out the dough to about 1/4 inch thick and cut into triangular or circular shapes.
- Heat oil in a deep frying pan over medium heat.
- Fry the mandazi in batches until golden brown on both sides, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- Serve warm, optionally dusted with powdered sugar.
