Description

Ingredients
- 500g smoked bamboo shoots
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 medium tomatoes, chopped
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Rinse the smoked bamboo shoots in cold water to remove excess salt and smoke flavor. Drain and set aside.
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the chopped tomatoes, ground coriander, and ground cumin to the pot. Cook until the tomatoes soften and the mixture becomes fragrant.
- Incorporate the smoked bamboo shoots into the pot, stirring well to combine.
- Add salt to taste and a little water if necessary to prevent sticking. Cover and let simmer for about 15-20 minutes, allowing the flavors to meld.
- Once cooked, remove from heat and garnish with fresh coriander leaves before serving.
