    • 1 cup groundnuts (peanuts), roasted and ground

    • 2 medium tomatoes, chopped
    • 1 medium carrot, diced
    • 1 bell pepper, chopped
    • 2 tablespoons vegetable oil
    • Salt to taste
    • Black pepper to taste
    • Fresh coriander for garnish

    Instructions

    1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent.
    2. Add the chopped tomatoes and cook until they soften.
    3. Stir in the diced carrot and bell pepper, cooking for an additional 5 minutes.
    4. Pour in the water or vegetable broth and bring to a boil.
    5. Once boiling, reduce the heat and add the ground peanuts, stirring well to combine.
    6. Simmer the soup for about 20 minutes, stirring occasionally.
    7. Season with salt and black pepper to taste.
    8. Remove from heat and let it cool slightly before serving.
    9. Garnish with fresh coriander before serving warm.
