    Description

    Ingredients

    • 2 cups sorghum or millet
    • 8 cups water
    • 1 cup sugar (optional)
    • 1/2 teaspoon salt
    • 1/4 teaspoon yeast (optional for faster fermentation)

    Instructions

    1. Rinse the sorghum or millet thoroughly under cold water and soak it in water overnight.
    2. Drain the grains and blend them with 4 cups of fresh water until smooth.
    3. Pour the mixture into a large pot and add the remaining 4 cups of water.
    4. Heat the mixture over medium heat, stirring constantly until it thickens and comes to a boil.
    5. Remove from heat and let it cool to room temperature.
    6. Once cooled, add yeast if using, and cover the pot with a clean cloth.
    7. Allow the mixture to ferment in a warm place for 2-3 days, stirring occasionally.
    8. After fermentation, strain the liquid through a fine sieve or cheesecloth into a clean container.
    9. Sweeten with sugar and add salt to taste.
    10. Chill the Ubushera in the refrigerator before serving.
