    Ingredients

    • 1 kg beef (or goat meat), cut into pieces
    • 2 tablespoons vegetable oil

    • 2 large tomatoes, chopped
    • 2 carrots, sliced
    • 1 bell pepper, chopped
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    • 1 teaspoon paprika
    • 2 cups water
    • 1 cup green beans, trimmed
    • 1 cup cassava, peeled and diced
    • 1 bunch of fresh spinach, chopped

    Instructions

    1. Heat the vegetable oil in a large pot over medium heat.
    2. Add the chopped onions and sauté until translucent.
    3. Stir in the minced garlic and grated ginger, cooking for another minute.
    4. Add the meat pieces to the pot and brown them on all sides.
    5. Incorporate the chopped tomatoes, carrots, and bell pepper, stirring well.
    6. Season with salt, black pepper, and paprika.
    7. Pour in the water and bring to a boil.
    8. Reduce the heat to low, cover, and let it simmer for about 1 hour, or until the meat is tender.
    9. Add the green beans and cassava, cooking for an additional 20 minutes.
    10. Finally, stir in the chopped spinach and cook for another 5 minutes until wilted.
    11. Serve hot with a side of ugali or rice.
