Ingredients
- 2 cups of dried beans (e.g., kidney beans or black beans)

- 1 teaspoon of salt
- 1 teaspoon of ground pepper
- 4 cups of water

Instructions
- Rinse the dried beans under cold water and soak them overnight in a large bowl. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
- Add the soaked beans and water to the pot. Bring to a boil, then reduce the heat and simmer for about 30 minutes, or until the beans are tender.
- Add the cubed pumpkin, salt, and pepper to the pot. Stir well and continue to cook for another 20-25 minutes, until the pumpkin is soft and the flavors meld together.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley if desired.
