    Ingredients

    • 6-8 medium-sized organic lemons
    • 1/2 cup kosher salt
    • 1 tablespoon whole black peppercorns
    • 1 tablespoon coriander seeds
    • 1 tablespoon cumin seeds
    • 1-2 dried red chilies (optional)
    • 1-2 bay leaves
    • 1-2 cups fresh lemon juice (enough to cover the lemons in the jar)

    Instructions

    1. Wash the lemons thoroughly and cut them into quarters, leaving the base intact so they remain connected.
    2. Generously sprinkle salt inside each lemon quarter and pack them tightly into a clean glass jar.
    3. Add the peppercorns, coriander seeds, cumin seeds, dried chilies, and bay leaves between the layers of lemons.
    4. Once the jar is full, press down on the lemons to release their juices.
    5. Pour fresh lemon juice over the lemons until they are completely submerged.
    6. Seal the jar tightly and store it in a cool, dark place for at least 3-4 weeks, shaking the jar occasionally to redistribute the salt and juice.
    7. After the fermentation period, the preserved lemons are ready to use and can be stored in the refrigerator for several months.
