    Ingredients

    • 2 cups of long-grain rice
    • 500 grams of lamb or chicken, cut into pieces
    • 1 large onion, finely chopped
    • 4 cloves of garlic, minced
    • 2 medium tomatoes, chopped
    • 1/4 cup of vegetable oil
    • 2 teaspoons of ground cumin
    • 2 teaspoons of ground coriander
    • 1 teaspoon of ground turmeric
    • 1 teaspoon of black pepper
    • 1 teaspoon of salt (to taste)
    • 4 cups of water
    • 1/4 cup of fresh cilantro, chopped (for garnish)

    Instructions

    1. Rinse the rice under cold water until the water runs clear, then soak it in water for about 30 minutes. Drain and set aside.
    2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are translucent.
    3. Add the minced garlic and cook for an additional minute.
    4. Add the meat pieces to the pot and brown them on all sides.
    5. Stir in the chopped tomatoes, cumin, coriander, turmeric, black pepper, and salt. Cook for about 5 minutes until the tomatoes soften.
    6. Pour in the water and bring the mixture to a boil. Reduce the heat, cover, and let it simmer for about 30 minutes, or until the meat is tender.
    7. Once the meat is cooked, add the drained rice to the pot, stirring gently to combine.
    8. Cover the pot and cook on low heat for about 20 minutes, or until the rice is fully cooked and has absorbed the liquid.
    9. Fluff the rice with a fork and let it sit for a few minutes before serving.
    10. Garnish with fresh cilantro and serve warm.
