    Description

    Ingredients

    • 1 cup lentils
    • 1 cup chickpeas, soaked overnight
    • 1 large onion, finely chopped
    • 2 tomatoes, chopped
    • 1/2 cup rice
    • 1/4 cup fresh cilantro, chopped
    • 1/4 cup fresh parsley, chopped
    • 2 tablespoons olive oil
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon paprika
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon salt
    • 6 cups vegetable broth or water
    • 1 lemon, cut into wedges for serving

    Instructions

    1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
    2. Stir in the chopped tomatoes, cumin, coriander, paprika, black pepper, and salt. Cook for about 5 minutes until the tomatoes soften.
    3. Add the lentils and soaked chickpeas to the pot, followed by the vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
    4. After 30 minutes, add the rice and continue to simmer for another 15-20 minutes, or until the lentils and rice are tender.
    5. Stir in the chopped cilantro and parsley just before serving.
    6. Serve hot with lemon wedges on the side.
