Ingredients
- 2 cups long-grain rice
- 4 cups water or chicken broth

- 1/4 cup tomato paste
- 1 bell pepper, chopped
- 1 teaspoon thyme

- 1 cup mixed vegetables (carrots, peas, green beans)
- Optional: 1-2 cups cooked chicken or beef, shredded
Instructions
- Rinse the rice under cold water until the water runs clear, then soak it in water for about 30 minutes. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
- Stir in the minced garlic and grated ginger, cooking for an additional minute.
- Add the diced tomatoes and tomato paste, stirring well to combine. Let it simmer for about 10 minutes until the sauce thickens.
- Incorporate the chopped bell pepper, thyme, curry powder, paprika, salt, and pepper. Mix well.
- Pour in the water or chicken broth and bring to a boil.
- Add the soaked and drained rice to the pot, stirring gently to combine.
- Reduce the heat to low, cover the pot with a tight-fitting lid, and let it cook for about 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- In the last 5 minutes of cooking, add the mixed vegetables and optional cooked chicken or beef, if using.
- Fluff the rice with a fork before serving and enjoy.
