Description
Tusker is a popular Kenyan lager beer, named after the tusks of elephants, which are a significant symbol of wildlife in the country. It is brewed using traditional methods and is celebrated for its crisp taste, making it a favorite among locals and visitors alike.
Ingredients
- water – 100 liters
- malted barley – 20 kg
- hops – 500 grams
- yeast – 200 grams
- sugar – 2 kg
Instructions
- Start by heating the water in a large brew kettle to around 65°C.
- Add the malted barley to the water and stir well, allowing it to steep for about 60 minutes.
- After steeping, raise the temperature to 75°C and sparge (rinse) the grains with additional hot water to extract the sugars.
- Bring the liquid (wort) to a boil and add the hops. Boil for 60 minutes, stirring occasionally.
- After boiling, cool the wort quickly using a wort chiller or an ice bath.
- Transfer the cooled wort to a fermentation vessel and add the yeast.
- Seal the vessel and allow it to ferment for about 7-14 days at a controlled temperature.
- Once fermentation is complete, siphon the beer into bottles, adding a small amount of sugar to each for carbonation.
- Cap the bottles and let them condition for another 1-2 weeks before enjoying.
