    Ingredients

    • 1 cup ackee (fresh or canned)

    • 2 tablespoons vegetable oil
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon paprika

    • 1/4 teaspoon Scotch bonnet pepper (optional, for heat)

    Instructions

    1. Rinse the salted codfish under cold water to remove excess salt. Soak it in water for about 2-3 hours, changing the water halfway through.
    2. After soaking, boil the codfish in fresh water for about 15 minutes until tender. Drain and flake the fish into bite-sized pieces.
    3. If using fresh ackee, boil it in salted water for about 10 minutes until tender. If using canned ackee, drain and set aside.
    4. In a large skillet, heat the vegetable oil over medium heat. Add the sliced onion, garlic, and bell pepper, and sauté until softened.
    5. Stir in the chopped tomato, black pepper, paprika, thyme, and Scotch bonnet pepper. Cook for another 2-3 minutes.
    6. Gently fold in the flaked codfish and ackee, being careful not to mash the ackee. Cook for an additional 5 minutes until heated through.
    7. Adjust salt to taste and serve hot, typically with fried dumplings or boiled green bananas.
