- 1 cup carrots, sliced
- 1 cup potatoes, cubed
- 1/2 cup green olives, pitted and sliced
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chicken pieces and brown them on all sides.
- Remove the chicken and set aside.
- In the same pot, add the chopped onion, bell pepper, and garlic, sautéing until softened.
- Stir in the chopped tomatoes and cook until they break down.
- Return the chicken to the pot and add the chicken broth, soy sauce, vinegar, oregano, cumin, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for about 30 minutes.
- Add the carrots and potatoes, stirring to combine.
- Continue to simmer for another 20-25 minutes, or until the vegetables are tender and the chicken is cooked through.
- Stir in the green olives and cook for an additional 5 minutes.
- Garnish with fresh cilantro before serving.
