    Description

    Spinach Stew, known locally as ‘Saka Saka’, is a beloved dish in the Central African Republic, made primarily from cassava leaves and often enriched with groundnuts.     Ingredients

    • 500g cassava leaves (or spinach if unavailable)
    • 1 cup groundnuts (peanuts), roasted and ground
    • 1 onion, chopped
    • 2 tomatoes, diced
    • 2 cloves garlic, minced
    • 1-2 green chilies, chopped (optional)
    • 4 cups water
    • Salt to taste
    • Palm oil or vegetable oil (for cooking)

    Instructions

    1. If using fresh cassava leaves, wash them thoroughly and boil in water for about 15 minutes to soften. Drain and chop finely. If using spinach, wash and chop.
    2. In a large pot, heat palm oil over medium heat. Add chopped onions and sauté until translucent.
    3. Add minced garlic and green chilies, cooking for an additional 2 minutes.
    4. Stir in the diced tomatoes and cook until they soften.
    5. Add the chopped cassava leaves (or spinach) to the pot, mixing well.
    6. Pour in 4 cups of water and bring to a boil.
    7. Reduce heat and let simmer for about 20 minutes.
    8. Stir in the ground peanuts and salt to taste, cooking for another 10 minutes until the stew thickens.
    9. Serve hot with rice or plantains.
