    • 1 cup mixed vegetables (carrots, peas, corn)
    • Protein of choice (chicken, beef, or fish, optional)

    Instructions

    1. Rinse the rice under cold water until the water runs clear, then soak it for about 30 minutes. Drain and set aside.
    2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
    3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
    4. Add the blended tomatoes and red bell pepper to the pot, along with the tomato paste. Cook for about 10-15 minutes, stirring occasionally, until the mixture thickens and the oil begins to separate.
    5. Season with thyme, curry powder, bay leaf, salt, and pepper.
    6. Pour in the chicken or vegetable broth and bring to a boil.
    7. Add the soaked rice to the pot, stirring well to combine. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
    8. In the last 5 minutes of cooking, add the mixed vegetables and protein if using, stirring gently.
    9. Once cooked, fluff the rice with a fork and let it sit covered for an additional 5 minutes before serving.
