Cameroon Ekwang
Description
Ekwang is a traditional dish from the Southwest region of Cameroon, made primarily from grated cocoyam (taro) and wrapped in leaves. It is often enjoyed during family gatherings and celebrations, symbolizing unity and cultural heritage.
Ingredients
- 1 kg cocoyam (taro), peeled and grated
- 200 g smoked fish, deboned and flaked
- 200 g ground crayfish
- 2 cups palm oil
- 1 medium onion, finely chopped
- 2-3 fresh pepper, finely chopped (to taste)
- Salt to taste
- Banana leaves or any large green leaves for wrapping
Instructions
- Prepare the banana leaves by cutting them into squares and briefly steaming them to make them pliable.
- In a large bowl, mix the grated cocoyam with the flaked smoked fish, ground crayfish, chopped onion, fresh pepper, and salt.
- Take a square of banana leaf and place a spoonful of the cocoyam mixture in the center. Fold the leaf over the mixture to create a parcel, ensuring it is sealed well.
- Repeat the process until all the mixture is used.
- In a large pot, heat the palm oil and add the parcels carefully.
- Cover the pot and steam the parcels for about 30-40 minutes on low heat, checking occasionally to ensure there is enough liquid in the pot.
- Once cooked, serve hot as a main dish or side.
