Description
Plantain chips are a popular snack in Barbados, made from green plantains that are sliced thin and fried until crispy. They are often enjoyed as a crunchy accompaniment to meals or as a standalone snack, reflecting the island’s love for plantains and their versatility in Caribbean cuisine.
Ingredients
- 2 green plantains
- Vegetable oil for frying
- Salt to taste
Instructions
- Peel the green plantains using a sharp knife. Cut off the ends and make a lengthwise slit in the skin to remove it.
- Slice the plantains thinly, about 1/8 inch thick, using a mandoline or a sharp knife.
- Heat vegetable oil in a deep frying pan over medium-high heat. Ensure there is enough oil to submerge the plantain slices.
- Once the oil is hot, carefully add the plantain slices in batches, making sure not to overcrowd the pan. Fry until they are golden brown and crispy, about 2-3 minutes per side.
- Remove the chips from the oil and place them on paper towels to drain excess oil.
- While still warm, sprinkle with salt to taste.
