- 2 pounds oxtails, cut into pieces

- 1 teaspoon salt
- 1 tablespoon soy sauce
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1 bell pepper, chopped
- 2 cups beef broth
- 1 can (14 oz) diced tomatoes
- 2 green onions, chopped
- 1 Scotch bonnet pepper (whole, optional for spice)
- 2 bay leaves
Instructions
- Heat the vegetable oil in a large pot over medium-high heat.
- Season the oxtails with salt, black pepper, and allspice. Brown the oxtails in the pot, about 5-7 minutes on each side.
- Remove the oxtails and set aside. In the same pot, add the onion, garlic, thyme, and bell pepper. Sauté until the onion is translucent.
- Return the oxtails to the pot and stir in the soy sauce, beef broth, diced tomatoes, carrots, celery, green onions, bay leaves, and Scotch bonnet pepper.
- Bring to a boil, then reduce the heat to low and cover. Let it simmer for about 2-3 hours, or until the oxtails are tender.
- Adjust seasoning with additional salt and pepper to taste before serving.
