    Ingredients

    • 2 lbs goat meat, cut into pieces

    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 1-2 Scotch bonnet peppers, whole (adjust for heat preference)
    • 1 tsp allspice (pimento) berries
    • 1-2 carrots, sliced
    • 1-2 potatoes, diced
    • Salt to taste
    • Black pepper to taste
    • 1-2 tbsp vegetable oil

    Instructions

    1. In a large pot, heat the vegetable oil over medium heat. Add the goat meat and goat head (if using) and brown them for about 5-7 minutes.
    2. Add the chopped onion, garlic, and scallions to the pot and sauté until the onions are translucent.
    3. Pour in the water and bring to a boil. Skim off any foam that rises to the surface.
    4. Add the thyme, allspice berries, and Scotch bonnet peppers. Reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the meat is tender.
    5. Once the meat is tender, add the sliced bananas, carrots, and potatoes. Season with salt and black pepper to taste.
    6. Continue to simmer for another 20-30 minutes, or until the vegetables are cooked through.
    7. Taste and adjust seasoning if necessary. Serve hot.
