Description

Ingredients
- 2 cups maize meal
- 2 cups sorghum flour
- 10 liters water
- 1 cup sugar (optional)
- 1 cup yeast (optional for faster fermentation)
Instructions
- In a large pot, bring 5 liters of water to a boil.
- Gradually add the maize meal while stirring continuously to prevent lumps. Cook for about 30 minutes until it thickens.
- In a separate bowl, mix the sorghum flour with 5 liters of warm water to create a slurry.
- Combine the thick maize mixture with the sorghum slurry and stir well.
- Allow the mixture to cool to room temperature.
- If using yeast, dissolve it in a small amount of warm water and add it to the mixture.
- Cover the pot with a cloth and let it ferment for 2-3 days, stirring occasionally.
- Once fermented, strain the mixture through a fine sieve or cloth to separate the liquid from the solids.
- If desired, add sugar to taste.
- Serve chilled or at room temperature in traditional containers.
