    • 2 cups all-purpose flour
    • 1 teaspoon salt

    • 1 medium tomato, diced
    • 1 small green bell pepper, diced
    • 1 small carrot, grated
    • Salt and pepper to taste

    Instructions

    1. In a mixing bowl, combine the flour and salt. Gradually add water and knead until a smooth dough forms. Let it rest for about 30 minutes.
    2. Divide the dough into small balls and roll each ball into a thin circle.
    3. Heat a skillet over medium heat and cook each chapati for about 1-2 minutes on each side until golden brown. Set aside.
    4. In a separate bowl, whisk the eggs and season with salt and pepper.
    5. In the same skillet, add a little oil and sauté the onions, tomatoes, bell pepper, and carrot until soft.
    6. Pour the whisked eggs into the skillet and cook until set, stirring gently to combine the vegetables.
