    Ingredients

    • 10 green bananas (matoke)
    • 2 tablespoons vegetable oil
    • 1 onion, chopped
    • 2 cloves garlic, minced

    • 2 tomatoes, chopped
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    • 1 cup vegetable broth or water
    • 1 cup peas (optional)
    • Fresh coriander for garnish (optional)

    Instructions

    1. Peel the green bananas and cut them into large chunks.
    2. In a large pot, heat the vegetable oil over medium heat.
    3. Add the chopped onion and sauté until translucent.
    4. Stir in the minced garlic and grated ginger, cooking for another minute.
    5. Add the chopped tomatoes, salt, and black pepper, cooking until the tomatoes soften.
    6. Add the banana chunks to the pot and pour in the vegetable broth or water.
    7. If using, add the peas at this stage.
    8. Cover the pot and steam the bananas on low heat for about 30-40 minutes, or until they are tender.
    9. Once cooked, mash the bananas slightly with a fork or potato masher, mixing them with the sauce.
    10. Serve hot, garnished with fresh coriander if desired.
