Ingredients
- 4 pieces of fresh fish (such as snapper or grouper)

- 1 can (400ml) of coconut milk

- 2 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 1 tablespoon of lime juice
- 1 tablespoon of vegetable oil
- 1 teaspoon of turmeric powder
- Salt and pepper to taste
- Fresh coriander for garnish
Instructions
- Rinse the rice under cold water until the water runs clear. Cook the rice according to package instructions.
- In a large pan, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent.
- Add the turmeric powder and stir for a minute to release the flavors.
- Place the fish in the pan and season with salt, pepper, and lime juice. Cook for about 5 minutes on each side, or until the fish is cooked through and flakes easily.
- Pour the coconut milk over the fish and let it simmer for an additional 5 minutes.
- Serve the fish on a plate with a generous portion of rice, spooning the coconut sauce over the top. Garnish with fresh coriander.
