    • 1-2 Scotch bonnet peppers, whole (adjust to taste)
    • 2 carrots, sliced
    • 1 can (15 oz) butter beans, drained
    • 4 cups beef broth
    • 1 tablespoon soy sauce
    • 1 tablespoon browning sauce
    • Salt and pepper to taste

    Instructions

    1. Rinse the oxtail pieces under cold water and pat them dry. Season with salt and pepper.
    2. In a large pot, heat the vegetable oil over medium-high heat. Add the oxtail and brown on all sides. Remove and set aside.
    3. In the same pot, add the onion and garlic, sautéing until soft.
    4. Return the oxtail to the pot, adding thyme, scallions, Scotch bonnet peppers, carrots, and beef broth. Stir in the soy sauce and browning sauce.
    5. Bring to a boil, then reduce heat to low, cover, and simmer for about 2-3 hours, or until the oxtail is tender.
    6. Add the butter beans in the last 30 minutes of cooking. Adjust seasoning if necessary.
    7. Serve hot with rice and peas or dumplings.
