    Ingredients

    • 1 whole chicken, cut into pieces
    • 2 cups lentils, rinsed
    • 4 cups water
    • 2 large onions, finely chopped
    • 4 cloves garlic, minced
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cinnamon
    • 1 teaspoon turmeric
    • 1 teaspoon black pepper
    • 1 teaspoon salt
    • 1/4 cup olive oil
    • 1/2 cup chopped fresh cilantro
    • 1/2 cup chopped fresh parsley
    • 4 msemen (Moroccan flatbreads)
    • 1 lemon, cut into wedges (for serving)

    Instructions

    1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until soft and translucent.
    2. Add the chicken pieces to the pot, browning them on all sides.
    3. Stir in the ginger, cinnamon, turmeric, black pepper, and salt, cooking for another 2-3 minutes to release the spices’ aromas.
    4. Add the lentils and water to the pot, bringing it to a boil. Reduce the heat to low, cover, and let simmer for about 45 minutes, or until the chicken is cooked through and the lentils are tender.
    5. While the chicken and lentils are cooking, prepare the msemen according to your preferred recipe or purchase them from a local market.
    6. Once the chicken is done, remove it from the pot and shred the meat, discarding the bones.
    7. Serve the shredded chicken and lentils over the msemen, garnished with chopped cilantro and parsley. Serve with lemon wedges on the side.
