Description

Ingredients
- 1 whole chicken or 1 kg pigeon
- 2 large onions, finely chopped
- 4 cloves garlic, minced
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp turmeric
- 1/2 tsp saffron threads
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh cilantro
- 1/2 cup slivered almonds, toasted
- 4 large eggs
- 1/2 cup powdered sugar
- 1 package of warqa (or phyllo dough)
- 1/2 cup melted butter
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- In a large pot, combine the chicken or pigeon with onions, garlic, spices (cinnamon, ginger, turmeric, saffron), parsley, cilantro, salt, and pepper. Add enough water to cover the meat and simmer until fully cooked (about 1 hour).
- Remove the meat, let it cool, and shred it, discarding bones. Reserve the cooking liquid.
- In a skillet, toast the slivered almonds until golden. Set aside.
- In a bowl, whisk the eggs and add them to the reserved cooking liquid, cooking over low heat until thickened.
- Mix the shredded meat with the egg mixture and toasted almonds.
- Preheat the oven to 375°F (190°C).
- Lay out a sheet of warqa or phyllo dough, brush with melted butter, and layer several sheets, creating a base.
- Spoon the filling onto the center and fold the edges over to form a pie.
- Brush the top with more butter and bake for 30-40 minutes until golden brown.
- Dust with powdered sugar before serving and accompany with lemon wedges.
