- 2 cups long-grain rice

- 1 bell pepper, chopped
- 2 carrots, sliced
- 1 cup green beans, chopped
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 4 cups water
- 1 bay leaf
- 1 teaspoon thyme
Instructions
- Rinse the rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and minced garlic, sautéing until translucent.
- Add the beef and chicken pieces to the pot, browning them on all sides.
- Stir in the diced tomatoes, bell pepper, carrots, and green beans, cooking for about 5 minutes until the vegetables soften.
- Season the mixture with salt, black pepper, paprika, thyme, and add the bay leaf.
- Pour in the water and bring to a boil. Once boiling, reduce the heat and let it simmer for 15 minutes.
- Add the soaked rice to the pot, stirring gently to combine. Cover the pot and let it cook on low heat for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.
- Once cooked, remove from heat and let it sit covered for an additional 10 minutes before serving. Fluff the rice with a fork and serve warm.
