    • 2 carrots, sliced
    • 1 cup of chicken broth

    • 1 teaspoon of thyme
    • 1 teaspoon of black pepper
    • Salt to taste
    • 1 tablespoon of tomato paste
    • 1 bay leaf
    • Chili pepper to taste (optional)

    Instructions

    1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until translucent.
    2. Add the minced garlic and ginger, stirring for about 2 minutes until fragrant.
    3. Incorporate the chicken pieces, browning them on all sides.
    4. Add the blended tomatoes, tomato paste, thyme, black pepper, and salt. Stir well and let it cook for about 10 minutes.
    5. Pour in the chicken broth and add the bay leaf. Cover and simmer for 20 minutes.
    6. While the chicken is cooking, fry the sliced plantains in a separate pan until golden brown and set aside.
    7. After 20 minutes, add the carrots and green bell pepper to the chicken. Cook for an additional 10 minutes until the vegetables are tender.
    8. Serve the chicken hot, garnished with the fried plantains on the side.
