Description

Ingredients
- 1 kg pork shoulder, finely minced
- 200 g pork fat, finely minced

- 1/2 teaspoon cayenne pepper (optional)
- 1/4 cup red wine
- Natural hog casings (for stuffing)
Instructions
- In a large bowl, combine the minced pork shoulder and pork fat.
- Add the minced garlic, paprika, black pepper, cumin, salt, and cayenne pepper (if using). Mix well to ensure the spices are evenly distributed.
- Pour in the red wine and mix until fully incorporated.
- Rinse the hog casings thoroughly and soak them in water for about 30 minutes.
- Stuff the casings with the sausage mixture, being careful not to overfill. Tie off the ends securely.
- Hang the sausages in a cool, dry place to air dry for 24 hours.
- Smoke the sausages over low heat for about 2-3 hours, or until they reach the desired flavor and texture.
- Allow the sausages to cool before slicing and serving.
