    4. Add the diced tomatoes and tomato paste, stirring well to combine. Let it simmer for about 10 minutes until the sauce thickens.
    5. Incorporate the chopped bell pepper, thyme, curry powder, paprika, salt, and pepper. Mix well.
    6. Pour in the water or chicken broth and bring to a boil.
    7. Add the soaked and drained rice to the pot, stirring gently to combine.
    8. Reduce the heat to low, cover the pot with a tight-fitting lid, and let it cook for about 20-25 minutes, or until the rice is tender and the liquid is absorbed.
    9. In the last 5 minutes of cooking, add the mixed vegetables and optional cooked chicken or beef, if using.
