    • 1 cup mixed vegetables (carrots, peas, and green beans)
    • Protein of choice (chicken, fish, or tofu) – optional

    Instructions

    1. Rinse the rice under cold water until the water runs clear, then soak it for 30 minutes. Drain and set aside.
    2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
    3. Stir in the red and green bell peppers, cooking for an additional 5 minutes.
    4. Add the tomato puree and tomato paste, cooking for about 10 minutes until the mixture thickens and the oil begins to separate.
    5. Season with thyme, curry powder, paprika, salt, and black pepper. Stir well to combine.
    6. Pour in the chicken or vegetable broth and add the bay leaf. Bring to a boil.
    7. Add the drained rice to the pot, stirring to ensure even distribution. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
    8. In the last 5 minutes of cooking, add the mixed vegetables and protein if using, stirring gently.
    9. Remove from heat and let it sit covered for an additional 5 minutes before serving.
