Description

Ingredients
- 2 cups maize meal
- 4 cups water
- 1/2 cup sugar (optional)

- 1/2 teaspoon yeast (optional)
- 1 tablespoon lemon juice (optional for flavor)
Instructions
- In a large bowl, mix the maize meal with 2 cups of water to form a smooth paste.
- In a separate pot, bring the remaining 2 cups of water to a boil.
- Gradually add the maize paste to the boiling water while stirring continuously to avoid lumps.
- Cook for about 10 minutes until thickened, then remove from heat.
- Allow the mixture to cool to room temperature.
- Once cooled, you can add sugar, salt, and yeast if desired. Mix well.
- Cover the mixture with a cloth and let it ferment at room temperature for 1-2 days, depending on how sour you want it.
- After fermentation, stir in lemon juice if using.
