Description
Chibuku is a traditional Zambian beer made from fermented maize and sorghum. It holds cultural significance as a communal drink, often enjoyed during social gatherings and celebrations.
Ingredients
- 2 cups maize meal
- 1 cup sorghum flour
- 10 liters of water
- 1 cup of sugar (optional)
- 1 cup of yeast (optional for faster fermentation)
Instructions
- In a large pot, bring 5 liters of water to a boil.
- Gradually add the maize meal while stirring continuously to prevent lumps. Cook for about 30 minutes until thick.
- In a separate bowl, mix the sorghum flour with 5 liters of cold water to create a slurry.
- Combine the cooked maize porridge with the sorghum slurry in a large fermentation container.
- If using, add sugar and yeast to the mixture. Stir well.
- Cover the container with a cloth and let it ferment in a warm place for 2-3 days, stirring occasionally.
- Once fermented, strain the liquid through a fine sieve or cloth to separate the solids.
- Serve chilled or at room temperature in traditional cups.
