Ingredients
- 2 lbs goat meat, cut into pieces
- 2 tablespoons curry powder

- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2-3 sprigs fresh thyme
- 2-3 green onions, chopped
- 2-3 Scotch bonnet peppers, whole (adjust for heat preference)
- 2 cups water
- 1 large potato, diced (optional)
- 1 can (14 oz) coconut milk (optional)
Instructions
- In a large bowl, combine goat meat with curry powder, turmeric, allspice, black pepper, and salt. Mix well and let marinate for at least 1 hour, preferably overnight.
- Heat vegetable oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
- Add minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
- Add the marinated goat meat to the pot, stirring to coat with the onion mixture. Cook for about 10 minutes until the meat is browned.
- Add thyme, green onions, and whole Scotch bonnet peppers to the pot. Pour in the water and bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the goat is tender. Add more water if necessary to prevent sticking.
- If using, add diced potato and coconut milk during the last 30 minutes of cooking.
- Adjust seasoning as needed and serve hot with rice or roti.
