Ingredients
- 1 bunch of callaloo leaves (or spinach as a substitute)

- 1 cup of okra, sliced
- 1 teaspoon of thyme (fresh or dried)
- Salt to taste
- Black pepper to taste
- 2 tablespoons of vegetable oil
- 1 cup of water
Instructions
- Rinse the callaloo leaves thoroughly under running water and chop them coarsely.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Add the chopped callaloo leaves to the pot, stirring well to combine.
- Pour in the coconut milk and water, then add the sliced okra, thyme, Scotch bonnet peppers, salt, and black pepper.
- Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes, stirring occasionally, until the leaves are tender.
- Remove the Scotch bonnet peppers before serving.
- Serve hot as a side dish or over rice.
