Ingredients
- 2 cups dried kidney beans
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil

- 1 teaspoon turmeric powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups water
- 1 medium tomato, chopped
- 1/4 cup coconut milk (optional)
Instructions
- Rinse the dried kidney beans under cold water and soak them in water overnight.
- Drain the beans and place them in a pot with 4 cups of fresh water. Bring to a boil and then reduce to a simmer, cooking until the beans are tender (about 1-1.5 hours).
- In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, cumin, coriander, turmeric, salt, and black pepper, stirring for about 2 minutes until fragrant.
- Stir in the chopped tomato and cook for another 5 minutes.
- Once the beans are cooked, drain any excess water and add them to the pan with the sautéed mixture.
- If using, stir in the coconut milk and let simmer for an additional 10 minutes to combine flavors.
- Serve hot with rice or ugali.
