    Banana beer, known locally as ‘malwa’ or ‘pombe ya ndizi’, is a traditional alcoholic beverage made from fermented bananas.     Ingredients

    • 10 ripe bananas
    • 2 cups of water
    • 1/2 cup of millet or sorghum flour
    • 1/4 cup of sugar (optional)
    • 1/4 teaspoon of yeast (optional)

    Instructions

    1. Peel the ripe bananas and mash them in a large bowl until smooth.
    2. In a separate pot, boil 2 cups of water and then add the mashed bananas, stirring well.
    3. Allow the mixture to cool to room temperature.
    4. Once cooled, add the millet or sorghum flour to the banana mixture and mix thoroughly.
    5. If using, add sugar and yeast to the mixture, stirring to combine.
    6. Cover the bowl with a clean cloth and let it ferment in a warm place for 2-3 days, stirring occasionally.
    7. After fermentation, strain the liquid through a fine cloth or sieve into a clean container, discarding the solids.
    8. The banana beer is now ready to be served chilled or at room temperature.
