    Description

    Ingredients

    • 1 cup semolina
    • 1 cup plain yogurt
    • 1 cup sugar
    • 1/2 cup melted butter
    • 1 teaspoon baking powder
    • 1/4 cup desiccated coconut (optional)
    • 1/4 cup blanched almonds for garnish
    • 1 cup water (for syrup)
    • 1 cup sugar (for syrup)
    • 1 teaspoon lemon juice (for syrup)

    Instructions

    1. Preheat the oven to 180°C (350°F).
    2. In a mixing bowl, combine semolina, yogurt, sugar, melted butter, baking powder, and desiccated coconut (if using). Mix well until a smooth batter forms.
    3. Pour the batter into a greased baking dish, spreading it evenly.
    4. Score the surface into diamond shapes and place an almond in the center of each diamond.
    5. Bake in the preheated oven for 30-35 minutes or until golden brown.
    6. While the cake is baking, prepare the syrup by boiling water and sugar together. Add lemon juice and let it simmer for about 10 minutes.
    7. Once the cake is done, remove it from the oven and immediately pour the hot syrup over the cake. Allow it to soak for at least 30 minutes before serving.
