- 4 cups water
- 2 tablespoons vegetable oil

Instructions

- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for an additional minute.
- Stir in the drained samp and beans, salt, black pepper, paprika, and bay leaves if using.
- Pour in the water and bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 2-3 hours, or until the samp and beans are tender. Stir occasionally and add more water if necessary to prevent sticking.
- Once cooked, remove from heat and let it sit for a few minutes before serving.
