    Description

    Boerewors is a traditional South African sausage made from coarsely minced meat, typically beef and pork, seasoned with a blend of spices. It holds cultural significance as a staple at braais (barbecues) and is celebrated for its rich flavors and communal cooking style.

    Ingredients

    • 1 kg beef, coarsely minced
    • 500 g pork, coarsely minced
    • 250 g pork fat, diced
    • 2 teaspoons salt
    • 1 teaspoon black pepper
    • 1 teaspoon coriander seeds, toasted and ground
    • 1 teaspoon nutmeg
    • 1 teaspoon allspice
    • 2 tablespoons vinegar
    • 1 tablespoon Worcestershire sauce
    • 1/2 cup water
    • natural hog casings, soaked in water

    Instructions

    1. In a large mixing bowl, combine the minced beef, pork, and pork fat.
    2. Add the salt, black pepper, ground coriander, nutmeg, allspice, vinegar, Worcestershire sauce, and water to the meat mixture.
    3. Mix thoroughly by hand until all ingredients are well combined.
    4. Rinse the hog casings in cold water and then stuff them with the meat mixture, being careful not to overstuff.
    5. Twist the sausages into 15-20 cm links and tie the ends securely.
    6. Preheat a grill or braai to medium heat.
    7. Grill the boerewors for about 15-20 minutes, turning occasionally until they are browned and cooked through.
    8. Serve hot with traditional sides like pap and chakalaka.
