    Description

    Bariis is a traditional Somali rice dish often flavored with spices and served with meat or vegetables. It holds a significant place in Somali culture, commonly enjoyed during family gatherings and celebrations.

    Ingredients

    • 2 cups basmati rice
    • 4 cups water
    • 1 medium onion, finely chopped
    • 2 cloves garlic, minced
    • 1 teaspoon cumin seeds
    • 1 teaspoon cardamom pods
    • 1 teaspoon cinnamon powder
    • 1 teaspoon turmeric powder
    • Salt to taste
    • 2 tablespoons vegetable oil or ghee
    • 1 cup mixed vegetables (carrots, peas, and green beans)
    • 1 bay leaf

    Instructions

    1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
    2. In a large pot, heat the vegetable oil or ghee over medium heat. Add the chopped onion and sauté until translucent.
    3. Stir in the minced garlic, cumin seeds, cardamom pods, and bay leaf, cooking until fragrant.
    4. Add the turmeric powder, cinnamon powder, and salt, stirring well.
    5. Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices.
    6. Pour in 4 cups of water and bring to a boil.
    7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice is cooked and water is absorbed.
    8. In the last 5 minutes of cooking, add the mixed vegetables on top of the rice, cover, and let steam.
    9. Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.
