- 1 medium sweet potato, diced

Instructions
- In a large pot, heat the palm oil over medium heat. Add the chopped onions, garlic, and ginger, and sauté until the onions are translucent.
- Stir in the chopped tomatoes and green chilies, cooking until the tomatoes break down.
- Add the diced sweet potato and cook for a few minutes, stirring occasionally.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce heat and simmer until the sweet potatoes are tender, about 15-20 minutes.
- Stir in the ground peanuts and mix well. Allow the soup to simmer for another 10 minutes, stirring occasionally.
- Add the chopped spinach or kale and cook for an additional 5 minutes.
- Season with salt and black pepper to taste.
- Serve hot, often accompanied by rice or fufu.
