- 2 cups fresh ginger, peeled and grated
- 2 cups sugar
- 1/2 cup lemon juice
- 8 cups water
- 1/4 teaspoon active dry yeast

- 1/2 teaspoon ground cinnamon (optional)
Instructions
- In a large pot, bring 8 cups of water to a boil.
- Add the grated ginger and sugar to the boiling water, stirring until the sugar is completely dissolved.
- Remove the pot from heat and let it cool to room temperature.
- Once cooled, strain the mixture through a fine sieve or cheesecloth into a clean container to remove the ginger pulp.
- Stir in the lemon juice, yeast, and optional spices (cloves and cinnamon).
- Cover the container with a cloth and let it sit at room temperature for 24-48 hours to ferment.
- After fermentation, bottle the ginger beer in clean bottles, leaving some space at the top.
- Seal the bottles and refrigerate.
- Allow it to chill for at least 2 hours before serving.
- Serve over ice and enjoy your refreshing ginger beer!
