    Description

    Thieboudienne, also known as ‘ceebu jën’, is a traditional Senegalese dish made with fish, rice, and vegetables. It is considered the national dish of Senegal, symbolizing the country’s rich fishing heritage and culinary traditions.

    Ingredients

    • 1 kg of firm white fish (such as snapper or grouper)
    • 500 g of rice
    • 2 large tomatoes, blended
    • 1 onion, chopped
    • 2 cloves of garlic, minced
    • 1 bell pepper, chopped
    • 2 carrots, sliced
    • 1 small eggplant, diced
    • 1/2 head of cabbage, chopped
    • 1/2 cup of tomato paste
    • 1/4 cup of vegetable oil
    • 1 teaspoon of black pepper
    • 1 teaspoon of cayenne pepper
    • 1 teaspoon of salt
    • 2 bay leaves
    • 4 cups of water
    • 1 lemon, sliced
    • Fresh parsley for garnish

    Instructions

    1. Clean and season the fish with salt, black pepper, and lemon juice. Let it marinate for about 30 minutes.
    2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
    3. Stir in the blended tomatoes and tomato paste, cooking for about 10 minutes until the sauce thickens.
    4. Add the carrots, eggplant, bell pepper, and cabbage to the pot. Cook for another 10 minutes, stirring occasionally.
    5. Add the marinated fish to the pot, along with the bay leaves, cayenne pepper, and 4 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes.
    6. Carefully remove the fish and set aside.
    7. Add the rice to the pot, ensuring it is submerged in the sauce. Place the fish back on top of the rice.
    8. Cover the pot and cook on low heat for about 20-25 minutes, or until the rice is fully cooked and has absorbed the flavors.
    9. Once done, fluff the rice with a fork and serve hot, garnished with fresh parsley and lemon slices.
