    Senegal Attaya

    Description

Attaya is a traditional Senegalese green tea preparation that is deeply embedded in the social fabric of Senegalese culture. It is not just a drink but a ritual that involves three rounds of brewing and serves as a symbol of hospitality and friendship.

    Ingredients

    • 3 tablespoons of green tea (Gunpowder tea is preferred)
    • 1 liter of water
    • 1 cup of sugar (adjust to taste)
    • Fresh mint leaves (optional, for garnish)

    Instructions

    1. Boil 1 liter of water in a kettle.
    2. In a teapot, add the green tea and pour a small amount of boiling water over it to rinse the leaves, then discard this water.
    3. Add the remaining boiling water to the teapot and let it steep for about 5 minutes.
    4. After steeping, pour the tea into a glass from a height to aerate it, then return it to the teapot. Repeat this process three times, adding sugar after the first pour and adjusting to taste.
    5. Optionally, add fresh mint leaves during the last pour for added flavor.
    6. Serve the tea in small glasses and enjoy the ritual with friends or family.
