- 1 teaspoon dried oregano
- 1/2 cup red wine vinegar
- Natural sausage casings (about 2 meters)
Instructions
- Soak the sausage casings in water for at least 30 minutes, then rinse thoroughly.
- In a large bowl, combine the minced pork shoulder and pork fat.
- Add the minced garlic, paprika, black pepper, salt, cayenne pepper, oregano, and red wine vinegar to the meat mixture.
- Mix thoroughly until all ingredients are well combined.
- Stuff the sausage casings with the meat mixture, being careful not to overfill. Tie off the ends securely.
- Hang the sausages in a cool, dry place to cure for at least 24 hours.
- If desired, smoke the sausages over low heat for additional flavor.
- Cook the sausages by grilling, frying, or boiling before serving.
