Instructions
- Rinse the callaloo leaves thoroughly under cold water and chop them coarsely.
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Stir in the diced tomato and cook for another 2-3 minutes.
- Add the sliced okra and cook for an additional 5 minutes, stirring occasionally.
- Incorporate the chopped callaloo leaves, thyme, black pepper, and salt.
- Pour in the coconut milk and add the Scotch bonnet peppers.
- Stir well, cover the pot, and let it simmer on low heat for about 15-20 minutes, or until the callaloo is tender.
- Remove the Scotch bonnet peppers before serving.
- Serve hot as a side dish or over rice.
